Jackfruit Burritos

You’ll absolutely love this recipe. A Mexican special bursting with flavour, and if you get the jackfruit right, the meaty texture will be right up your street!

Ingredients:

  • White basmati rice
  • Handful fresh parsley
  • Wholewheat tortilla wraps
  • One can black beans
  • One can organic jackfruit pieces
  • One avocado
  • 1 courgette
  • One tomato
  • One yellow and red pepper
  • 1 red onion (for the guac) and one white onion (for vegetable mix)
  • 1 lime

1 tbsp agave syrup

Spices

  • Onion powder
  • Garlic pepper
  • Paprika
  • Smoky BBQ
  • Salt
  • Chilli flakes

Method

  • For the rice - cook as you normally would - once done, add chopped fresh parsley, onion powder and squeeze 1/2 a lime in
  • For the jackfruit - empty contents of can into a saucepan; add smoky BBQ seasoning, paprika, and agave syrup; allow it to reduce
  • For the black beans - drain all liquid and rinse; sautée in a pan and add onion powder, garlic pepper, paprika, and a pinch of salt
  • For the guacamole - mash one avocado, chop your red onion and tomato onto fine pieces, and add in along with juice of 1/2 lime and a pinch of salt.
  • For the vegetable mix - chop your peppers and white onion into long strips, chop your courgette, sautée and season with paprika, garlic pepper, chilli flakes and a pinch of salt
